Japanese Chef knife *Keijiro Doi* Blue 2 Unagisaki 225mm from Japan *Free Shipping*

A single edged knife, Unagisaki ( eel knife ) Kanto Type.

Blacksmith :  Keijiro Doi

Doi Keijiro was born in 1927 to the famous knife Sharpener Doi Kazuo and began his carrier as a blacksmith at the young age of 19. Keijiro gained acclaim through his perfection of a very difficult low temperature forging technique known as ‘yakidoshi’ and is a pioneer of forging Blue Steel No.2, which was previously thought to be impossible. In 1987 Keijiro was denoted as a Traditional Craftsman by the Japanese Ministry of International Trade and Industry. In 1997, he was bestowed the honor of the Aoiro Toyosho. He retired from blacksmithing in 2012 and passed away in 2017.
