Japanese Natural Whetstone Shohonyama Ozaki Soft Asagi 480g for knives

Description

This is a softer-type Ozaki Asagi natural whetstone suitable for everything from regular knife sharpening to refined kasumi finishing.

Ozaki has long been regarded as one of the well-respected Kyoto natural stone regions among knife craftsmen and sharpeners. Softer examples in particular are known for their ability to create beautiful natural kasumi finishes while gently bringing out contrast in the jigane.

This particular stone is a long-term storage piece acquired from a knife dealer with whom we have worked for many years. It is a vintage stock item that was actually circulating in the market during the Showa 40–50 era (approximately the 1960s–1970s). Unlike many more recent Ozaki stones seen today, this piece retains the calm and refined sharpening sensation characteristic of older Kyoto natural whetstones.

The stone displays a subdued blue-gray to pale asagi coloration, with soft natural patterns spread throughout the surface. The stone quality is relatively soft, with excellent slurry generation. It produces a rich amount of fine and smooth slurry, allowing the jigane of kitchen knives to develop an elegant natural haze while achieving a soft and refined kasumi finish.

It pairs especially well with traditional Japanese kitchen knives. Rather than the sharp and aggressive feedback often associated with harder finishing stones, this stone offers the slightly moist, smooth, and gentle sensation unique to older Kyoto stones. It is comfortable and low-stress to use, making it suitable for everything from everyday kitchen knife maintenance to more serious kasumi polishing work.

The sides and reverse still retain natural textures and signs of long-term aging unique to vintage stones, giving the piece a distinct atmosphere reminiscent of Kyoto natural whetstones as they circulated during the Showa period.

Please note that these are not for beginner sharpeners since they're harder to use. These are natural stones meaning that every single one of them are different so my measured sizes are not accurate. This is a lifetime investment for people who live sharpening their knives and tools, do not hesitate to ask me your questions.”
