Mutsumi Hinoura Ajikataya Blue 2 Black Kiritsuke 210mm-240mm

Mutsumi Hinoura is the fourth-generation blacksmith of Hinoura Hamono Workshop, located in Sanjo City, Niigata Prefecture.

Born in 1981, he pursued his studies at a technical college before following the family tradition of blacksmithing.

Currently, he is in charge of the "Ajikataya" brand at Hinoura Hamono Workshop, where he crafts high-quality blades using traditional techniques such as "Tanetsugi" (forge welding). He also specializes in free forging to create unique nata (Japanese hatchets) and has expanded into kitchen knife production, collaborations with designers and anime, and other innovative projects.

Hinoura Hamono Workshop has a history of over 100 years, dating back to the late Meiji era. While preserving tradition, the workshop also embraces new technologies and designs.

Mutsumi is committed to sharing Japanese traditional craftsmanship with both domestic and international audiences. He also works to enhance the workshop’s reputation and nurture young artisans.

Interestingly, instead of learning directly from his father(Tsukasa Hinoura), he mastered the craft by observing and refining his skills on his own.

Through his dedication, Mutsumi Hinoura continues to merge tradition and innovation, passionately crafting high-quality blades.

The Blue 2 series we are introducing this time is a custom order that we requested from Mutsumi-san, supplying him with the steel materials for production. It showcases the unique toughness and sharpness characteristic of Blue 2 steel, making it a highly practical tool for professionals in the field.

Returns Policy

You may return most new, unopened items within 30 days of delivery for a full refund. We'll also pay the return shipping costs if the return is a result of our error (you received an incorrect or defective item, etc.).

You should expect to receive your refund within four weeks of giving your package to the return shipper, however, in many cases you will receive a refund more quickly. This time period includes the transit time for us to receive your return from the shipper (5 to 10 business days), the time it takes us to process your return once we receive it (3 to 5 business days), and the time it takes your bank to process our refund request (5 to 10 business days).
