Japanese Iwasaki Kiridashi Sanjo Seisakusho Swedish Steel 'Sen'

This kiridashi knife is produced in Sanjo, Niigata, carrying on the legacy of the renowned Iwasaki razor tradition.
Today, production is entrusted exclusively to craftsman Ryoichi Mizuochi, a successor to the lineage of Iwasaki Shigeyoshi, and the number of pieces produced remains extremely limited.

Rooted in the metallurgical principles established by Kosuke Iwasaki, the design transcends that of a simple cutting tool, reaching the level of a crafted work of art.
Made from Swedish steel, it features an exceptionally fine and uniform structure, achieving a high-level balance of sharpness and durability.

Its performance evolves with sharpening, making it a tool that improves with use — truly something to be “grown” over time.

Due to its limited production by a single craftsman, it holds significant value not only as a practical tool but also as a collectible piece.

A copy of Shigeyoshi Iwasaki’s personal notes, documenting his thoughts and philosophy during the creation process, is included.

“Sen（仙）” is the heaviest model among the three, and like “Me,” it features a gently contoured handle for a comfortable and secure grip, along with finely executed tsuchime (hammered) texture.
It is well-suited for users who prefer a powerful cutting feel and for working with solid materials such as wood.

At the same time, it offers excellent blade control, allowing it to handle everything from delicate tasks to work that requires a bit more force.
A highly refined model that achieves an ideal balance between ease of use and performance.

Returns Policy
