Description

Aizu-to | Natural Whetstone from Tajima, Minami(Soiuth) -Aizu, Fukushima

This is a natural Aizu whetstone from the Tajima area of Minami(South)-Aizu in Fukushima Prefecture, a region long known for producing reliable sharpening stones used by knife makers, carpenters, and craftsmen throughout Japan.

The approximate grit range is around #4000–#5000, making it well suited for the middle to pre-finishing stages of sharpening. The stone has a relatively high density and firm structure, producing a fine, controlled slurry that allows the edge to be refined smoothly while maintaining a pleasant cutting sensation. It offers an excellent balance between cutting speed and refinement, making it a versatile stone for both Japanese and Western knives.

Because of its tighter structure, the slurry tends to develop a little more slowly compared to softer stones. For more efficient sharpening, it is often beneficial to soak the stone in water for a short period before use, which helps the slurry form more quickly and allows for a smoother, faster sharpening process.

Aizu stones are valued for their ease of use, stability, and dependable sharpening performance. In recent years, however, good-quality Aizu stones have become increasingly difficult to obtain even within Japan, making well-selected examples like this more sought after by sharpeners and collectors alike.

Please note that these are not for beginner sharpeners since they're harder to use. These are natural stones meaning that every single one of them is different so my measured sizes are not accurate.
