Japanese Natural Whetstone Mizukihara Karasu Suita 866g Kyoto Japan

Description

This is a beautiful Mizukihara Karasu Suita, a natural finishing whetstone from Mizukihara, one of the notable whetstone-producing areas in Kyoto's Nishimono (Western Mine) region.

The sharpening surface features a calm bluish-gray base adorned with irregular dark gray and black mottled patterns known as "Karasu" (crow patterns), giving the stone a distinctive appearance with remarkable natural depth and character. When wet, the contrasting shades of the Karasu patterns become more pronounced, revealing the stone's unique and beautiful natural markings.

We rate this particular stone at approximately Hardness Lv. 4.0+, with an estimated grit equivalent of #6000–8000. Its moderately firm and compact structure provides stable sharpening performance with clear tactile feedback, allowing the user to maintain precise control over the blade. Neither excessively hard nor overly soft, it offers a well-balanced and comfortable sharpening experience.

One of the most distinctive characteristics of this stone is its ability to produce a fine, uniform, and delicate slurry. The finely textured slurry works evenly across the steel surface, providing a smooth sharpening feel while allowing precise refinement of both the cutting edge and bevel. Its balanced abrasive power and delicate finishing characteristics make it particularly easy to control throughout the sharpening process.

This stone is especially well suited for achieving a traditional Kasumi finish on Japanese kitchen knives. Its fine abrasive action helps create a soft, subdued appearance on the soft iron cladding (Jigane), while bringing out a natural and beautiful contrast with the harder steel core (Hagane). Beyond kitchen knives, it is also suitable for finishing chisels, hand plane blades, and various other edged tools.

Combining the stable sharpening characteristics of Hardness Lv. 4.0+, the refined abrasive texture of approximately #6000–8000 grit, and the ability to generate a smooth, consistent slurry, this stone offers excellent practicality and reliable finishing performance.

With its beautiful and distinctive Karasu patterns, this Mizukihara Suita is a particularly attractive natural whetstone that combines excellent sharpening performance with the unique character and natural beauty of Japanese whetstones.

Highly recommended for Kasumi finishing of traditional Japanese kitchen knives and precise final edge refinement.
