Description

This is a 30-size Namito from Izariyama, Kyoto.

Izariyama was a whetstone mine located in the northwestern part of Kyoto and was known as one of the Nishimono stone sources. This natural whetstone is well suited for the medium-finishing to finishing stages of kitchen knives and offers excellent water absorption. Once sufficiently saturated, the sharpening surface remains stable, providing a smooth, controlled sharpening experience throughout use.

Its sharpening feel is slightly different from stones from the Aisa layer, and it offers a smoother, faster cutting sensation than a typical Aoto. In terms of structure, it feels like a dense Nishimono Namito with a moderate degree of porosity, achieving an excellent balance between strong cutting performance and pleasant blade feedback.

Today, Izariyama itself has become extremely rare, and stones from this mine are increasingly difficult to find on the market. This is an attractive natural whetstone not only for practical sharpening use, but also as a valuable piece that preserves the history of Kyoto’s natural whetstone culture.
